Millet, considered one of the super foods, is an ancient grain that has been harvestet for thousands of years. With its short growing season and high nutrition it is a staple of the mountain regions of Asia and Northern Africa. Millet helps to alkalize the body bringing it back into its normal PH balance. It is also the most digestible of all the grains. For this reason it is a good first food for infants and is excellent for people recovering from illnesses.
The size of the uncooked grain is small, about 2.5mm. Many people think it looks like couscous. It cooks quickly like rice and can be used interchangeably in recipes- increase liquid by 1/2 cup. The flavor is similar to corn meal and the texture is light and dry.
